Italian Dark Roast Mocha Cookies

The perfect cookie to pair with coffee.



If you are like us, we are always looking for the perfect dessert to compliment the coffee you love. One of our favorite desserts to serve alongside our coffee are cookies. I've found the perfect cookie recipe for our Italian Roast Coffee.

This chocolaty, coffee infused coffee is perfectly suited to be served with your Italian Roast coffee or even a tall glass of milk.


Italian Dark Roast Mocha Cookies


Ingredients list

  • 1/2 cup (1 stick) of salted butter

  • 1 1/2 cups brown sugar

  • 4 teaspoons ground Italian roast coffee

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

  • 1 egg

  • 2 tablespoons cocoa powder

  • 2 cups flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • Whole coffee beans for decoration


Instructions

  1. Preheat oven to 340 degrees.

  2. Line baking sheets with parchment paper.

  3. Whisk together flour, baking powder, and salt. (set aside)

  4. Beat together cocoa powder, sugar, coffee, unsalted butter, vanilla and almond extract in a mixer until blended.

  5. Add egg and beat until light and creamy

  6. Add flour a little at a time until well mixed (could be crumbly - form into dough with hands)

  7. Roll into small round balls and press flat slightly add coffee bean into center of each cookie

  8. Bake for 13-15 minutes - cookies will look cracked

  9. Cool for 5 minutes
